The second weighing compares left to right. If a pair of 14k gold earrings differs by more than 0.05 grams between the two pieces, the heavier one goes back to the polishing bench because that weight difference means uneven metal distribution and the heavier earring will hang differently than the lighter one. Nobody consciously notices a 0.05 gram mismatch but the brain registers asymmetry in ways people cannot articulate. They just feel that something is off.
